CULA1295 Entremets and Specialty Cakes
This course focuses on providing students in-depth knowledge of the principles of decorative product preparation and its presentation. Topics covered include, but are not limited to, a variety of special occasion cakes, gateaux, tortes, entremets, petits fours glacé, and traditional cakes.

Learning Outcomes
The following outcomes will be addressed in the course:
Demonstrate professional, safe, and sanitary work practices
Apply basic math skills to recipe conversions
Demonstrate proper scaling and measurement techniques
Demonstrate the ability to assemble tiered cakes
Create edible decorative components
Create tiered cakes
Demonstrate production guidelines and conversion factors for gateaux, tortes, entremets, petits fours glacé, and traditional cakes
Select ingredients and equipment for desired gateau, torte, entremets, petits fours glacé, and traditional cake recipes
Assemble decorative gateaux, tortes, entremets, petits fours glacé, and traditional cakes from prepared cake layers, cake fillings, and icings

Course Scheduling
The scheduled hours of instruction include sixteen hours for each lecture credit, thirty two hours for each lab credit and forty hours for each credit of supervised occupational experience (SOE). Lecture credit may include formal or impromptu lectures, demonstrations or discussions with the entire class or with small groups or individuals. Refer to the Course Credits section of this course outline for the credit breakdown.
