CULA1260 Food Truck Foundations

This course provides students with a fundamental knowledge of food truck equipment, operations, food preparation, service, safety and sanitation, and regulatory requirements.  This class includes a combination of classroom discussion with hands-on, food truck learning.

Culinary Assistant Occupational Certificate, current registration to earn one, or instructor approval

Learning Outcomes

The following outcomes will be addressed in the course:
Identify essential food truck equipment and storage
Demonstrate knife skills, hand tool and equipment operation, emphasizing proper safety techniques
Explain important differences between food truck operations and restaurant operations
Demonstrate various cooking methods and techniques to prepare and serve food truck menu items
Evaluate characteristics of various food truck menu items
Demonstrate acceptable procedures when preparing potentially hazardous foods to include time/temperature principles
Maintain active Safety Data Sheets (SDS) for regulatory requirements

Course Scheduling

The scheduled hours of instruction include sixteen hours for each lecture credit, thirty two hours for each lab credit and forty hours for each credit of supervised occupational experience (SOE).  Lecture credit may include formal or impromptu lectures, demonstrations or discussions with the entire class or with small groups or individuals.  Refer to the Course Credits section of this course outline for the credit breakdown.
