CULA2060 Food Truck Operations

This course builds upon the skills developed in Food Truck Foundations, with a focus of hands-on food truck operations.  Students will develop the full range of skills necessary for operating and sustaining a successful food truck business of their own.

Prerequisite

CULA1260 or instructor approval. Completion of or concurrent enrollment in any of the following: ACCT1000, BUSN1510, BUSN2015, or BUSN2085

Learning Outcomes

The following outcomes will be addressed in the course:
Describe the functions of food truck personnel
Identify the costs of starting, operating, and sustaining a food truck
Identify required licensing and regulatory compliance for food truck operations
Develop a full food truck menu
Analyze purchasing and cost controls to achieve profitability
Explain inter-relationships between commissary kitchens and food truck work flow
Describe procedures for processing guest checks using current technology
Demonstrate acceptable procedures when preparing potentially hazardous foods to include time/temperature principles
Describe sales techniques, including menu knowledge and suggestive selling
Develop human relations skills necessary for operating a food truck
Provide full food-truck service to a targeted consumer base
Demonstrate cleaning and sanitation program in the constraints of a food truck operation

Course Scheduling

The scheduled hours of instruction include sixteen hours for each lecture credit, thirty two hours for each lab credit and forty hours for each credit of supervised occupational experience (SOE).  Lecture credit may include formal or impromptu lectures, demonstrations or discussions with the entire class or with small groups or individuals.  Refer to the Course Credits section of this course outline for the credit breakdown.
